Summary of the overall aims of the course

If your organisation works with food, you should ensure that staff are trained to an appropriate level to comply with food safety regulations.

This course covers a broad range of relevant aspects surrounding the supervision of food hygiene and food safety. Successfully completing this food safety course will enable you to take responsibility for food safety monitoring, conduct a hazard analysis, take action to address issues, supervise and train more junior staff.

Course objectives

At the end of the course delegates will be able to:

  • explain food safety legislation and the role of employers and employees in ensuring compliance
  • take action to control food storage temperatures, control contamination, and maintain high standards of hygiene
  • outline the requirements relating to the design of food premises and equipment
  • describe microbial, chemical, physical and allergenic food hazards
  • control food safety through implementing hazard analysis critical control points (HACCP)
  • describe methods for evaluating food safety control and procedures
  • explain their role in induction and on-going training of staff in the importance of food safety procedures

Target audience

This course is aimed at those who are responsible for the safety of food in an organisation. Those who would be expected to take corrective action to reduce food hazards, and those who may be asked to provide inductions and on-going training to more junior staff.

If you wish to enrol on this course, it’s advisable for you to have completed the Level 2 qualification (or similar) prior to attending the course.


This course is accredited by the Royal Society of Public Health (RSPH) and is mapped to the relevant National Occupational Standards.

Assessment Method

To successfully complete this course, you must pass an externally set multiple choice exam lasting 90 minutes.
